This nutritious and protein-packed cottage cheese and spinach quiche is a perfect savory breakfast solution. It balances the creamy texture of high-quality cottage cheese with nutrient-dense spinach and a buttery crust. A wonderful vegetarian option that relies on basic pantry staples to create a sophisticated, consistent brunch dish that is as reliable as it is delicious.

Ingredients

Scale

1 Pie Crust (pre-made or blind-baked homemade)
1.5 cups Cottage Cheese (small curd)
3 cups Fresh Spinach (chopped and tightly packed)
4 Large Eggs (room temperature)
1 cup Cheddar Cheese (shredded)
1 tsp Onion Powder
Salt and Pepper to taste

Instructions

Preheat your oven to 375°F.
Press the pie dough into a nine-inch pie dish and crimp the edges.
Sauté the fresh spinach in a non-stick pan until wilted.
Transfer the wilted spinach to a paper towel and squeeze out all excess moisture.
Whisk the eggs in a large mixing bowl until fully combined.
Stir in the cottage cheese, shredded cheddar, onion powder, salt, and pepper.
Spread the prepared spinach evenly across the base of the pie crust.
Pour the egg and cheese mixture over the spinach.
Bake for 45 minutes or until the center is set and the top is golden brown.

Notes

Ensure all excess moisture is squeezed from the spinach to prevent a soggy bottom. Manual shredding of cheddar cheese is recommended for a better melt.
