Ingredients

Scale

1 lb salmon fillets, skinless and finely diced
2 large avocados, ripe
1/2 cup panko breadcrumbs
1/4 cup fresh cilantro, finely chopped
2 tbsp lemon juice, freshly squeezed
2 cloves garlic, minced
2 tbsp olive oil
Sea salt to taste
Black pepper to taste

Instructions

Dice salmon fillets into very small, uniform pieces.
Combine salmon, breadcrumbs, minced garlic, and cilantro in a large bowl.
Shape the mixture into 1-inch tightly packed spheres.
Heat olive oil in a non-stick skillet over medium-high heat.
Sear salmon balls for 3 minutes per side until golden brown and opaque.
Scoop avocado flesh into a food processor.
Add lemon juice, sea salt, and black pepper to the processor.
Blend until the avocado sauce is smooth and velvety.

Notes

Ensure the salmon is diced uniformly for even cooking. For extra crispness, lightly toast the panko breadcrumbs before adding them to the salmon mixture. Store leftover sauce in an airtight container with plastic wrap pressed directly against the surface to prevent oxidation.
