These quick crispy crab and shrimp queso taquitos deliver a perfect fusion of savory seafood and molten cheese wrapped in a golden, crunch-perfect tortilla. Lump crab meat and succulent diced shrimp are mixed with creamy queso blanco, cream cheese, and a hint of Cajun spice. Designed to avoid the soggy texture of typical seafood rolls, these handheld snacks offer a elevated, coastal-inspired crunch in every bite, making them an ideal appetizer for any gathering.
12 small flour tortillas (street taco size)
1 cup lump crab meat (checked for shell fragments)
1 cup shelled shrimp, finely diced
1 cup queso blanco, shredded or dip style
4 oz cream cheese, softened
3 tbsp green onions, finely sliced
1 tsp Cajun seasoning
Vegetable oil for frying
Combine the lump crab meat, diced shrimp, softened cream cheese, queso blanco, green onions, and Cajun seasoning in a bowl.
Fold the mixture gently to keep the seafood intact while evenly distributing the cheese.
Lay a tortilla flat and place two tablespoons of the filling in a line along the center.
Roll the tortilla tightly into a cylinder and secure with a toothpick.
Heat one inch of vegetable oil in a heavy-bottomed skillet to medium-high heat.
Fry the taquitos in batches until golden brown and crispy on all sides.
Drain on paper towels and remove toothpicks before serving.
Ensure seafood is patted dry before mixing to keep the filling from becoming watery.
These can also be air-fried at 375°F for 8-10 minutes, lightly brushed with oil.
Serve immediately while the cheese is molten inside.
