1 loaf Gluten-free white bread (Canyon Bakehouse or similar)
1 cup Raspberries (fresh or frozen)
1 cup Blueberries (fresh or frozen)
1 cup Strawberries, sliced
4 large Eggs (room temperature)
1 cup Liquid egg whites (pasteurized)
1/2 cup Cottage cheese (blended smooth)
1.5 cups Almond milk (unsweetened)
1/4 cup Maple syrup (pure grade A)
1 tsp Lemon zest (freshly grated)
1 tbsp Lemon juice (freshly squeezed)
1/2 tsp Almond extract (vanilla is a substitute)
1 tsp Ground cinnamon (Ceylon preferred)
60g Vanilla protein powder (whey or plant-based)
Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish thoroughly.
Cube the gluten-free bread into 1-inch pieces and arrange in the dish.
Scatter raspberries, blueberries, and sliced strawberries evenly over the bread.
In a blender, combine eggs, liquid egg whites, cottage cheese, almond milk, maple syrup, lemon zest, lemon juice, almond extract, cinnamon, and protein powder until smooth.
Pour the custard mixture over the bread and fruit, ensuring everything is evenly coated.
Let the casserole sit for 10 minutes to allow the bread to absorb the custard.
Bake for 40–50 minutes or until golden and firm to the touch
Optional: Sprinkle with additional cinnamon or nuts before serving.
Storage: Refrigerate for up to 5 days or freeze for 1 month.
Ensure bread is gluten-free if avoiding gluten.
Use any frozen berry mix if fresh fruits are unavailable.
For a vegan option, substitute whey protein with plant-based protein powder and replace eggs with flax ‘eggs’ or chickpea flour (adjust proportions accordingly).
