4 (6oz) salmon fillets, center-cut
2 cups cherry tomatoes, halved
1/2 cup Kalamata olives, pitted and chopped
1 can artichoke hearts, drained and quartered
4 cloves garlic, minced
3 tablespoons extra virgin olive oil
1 tablespoon dried oregano
1 large lemon, sliced into rounds

Instructions

Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
In a large bowl, toss the cherry tomatoes, olives, artichoke hearts, and minced garlic with half of the olive oil.
Arrange the vegetable mixture in the center of the prepared baking sheet to create a bed.
Pat the salmon fillets dry with paper towels and place them on top of the vegetables.
Drizzle the remaining olive oil over the salmon and sprinkle with dried oregano.
Place lemon slices over the salmon and vegetables.
Roast in the preheated oven for 20 minutes, or until the salmon flakes easily with a fork and vegetables are tender.
