4 salmon fillets (6oz each)
1/2 cup sun-dried tomatoes (packed in oil), drained and chopped
1/2 cup crumbled feta cheese
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and black pepper to taste
Preheat your oven to 400 degrees Fahrenheit.
Pat the salmon dry with paper towels to ensure even cooking and better texture.
Arrange the fillets in a shallow baking dish lined with parchment paper.
Mix the sun-dried tomatoes, feta, garlic, parsley, lemon juice, and oregano in a small bowl.
Spread the mixture generously over each salmon fillet.
Bake for 12 to 15 minutes or until the fish reaches an internal temperature of 145 degrees Fahrenheit.
Ensure you pat the salmon dry thoroughly before spreading the mixture to keep the topping in place. If substituting, steelhead trout or Arctic char make excellent alternatives to salmon. Store leftovers in an airtight container for up to 2 days.
