4 (6oz each) Mahi Mahi fillets
1 cup heavy cream
4 cloves fresh garlic, minced
3 tbsp fresh lemon juice
2 tbsp unsalted European style butter
1 tbsp olive oil
2 tbsp fresh parsley, chopped
Salt and black pepper to taste

Instructions

Pat the Mahi Mahi fillets dry and season both sides generously with salt and pepper.
Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat until shimmering.
Sear the fillets for 4 minutes per side until golden brown, then remove and set aside on a warm plate.
Lower heat to medium and add the remaining tablespoon of butter and minced garlic to the skillet.
Sauté the garlic for 60 seconds until fragrant, being careful not to burn it.
Pour in the lemon juice to deglaze the pan, scraping up the browned bits from the fish.
Pour in the heavy cream and simmer for 2-3 minutes until the sauce slightly thickens.
Return the fish to the pan to coat with the sauce and heat through.
Garnish with fresh parsley and serve immediately.

Notes

Ensure the fish is patted completely dry before searing to achieve a superior golden crust. Do not let the garlic brown during the sauté step, as it can turn bitter. Serve alongside roasted asparagus or steamed jasmine rice to soak up the luxurious sauce.
