4 salmon fillets
1 package Boursin Garlic and Herb cheese
12 oz fettuccine or penne pasta
2 cups fresh baby spinach
0.5 cup reserved pasta water
2 tbsp extra virgin olive oil
Salt and black pepper to taste

Instructions

Boil a large pot of salted water and cook the pasta until al dente.
Reserve 0.5 cup of pasta water and then drain the pasta.
Season salmon fillets with salt and pepper.
In a large skillet, heat olive oil over medium-high heat and sear salmon for about 4 minutes per side.
Remove salmon from the pan once it reaches 145 degrees Fahrenheit and set aside to rest.
Reduce skillet heat to medium and add the Boursin cheese and reserved pasta water.
Whisk until the cheese melts into a creamy sauce.
Add the baby spinach to the skillet and cook until just wilted.
Toss the cooked pasta into the sauce until well coated.
Serve the pasta topped with the rested salmon fillets.
