A protein-packed, oven-baked breakfast that combines pumpkin spices with Greek yogurt, whey/plant-based protein powder, and chocolate chips. Sustains energy with fiber-rich ingredients and avoids blood sugar spikes.

Ingredients

3 cups rolled oats
1 cup pumpkin puree
2 scoops (60g) protein powder (vanilla whey or plant-based)
1/2 cup Greek yogurt
1.5 cups almond milk
2 large eggs
3 tbsp maple syrup
1/2 cup dark chocolate chips
2 tsp pumpkin pie spice
1.5 tsp baking powder

Instructions

Preheat oven to 350°F
Grease a 9×9 inch baking dish
Whisk eggs, pumpkin puree, Greek yogurt, almond milk, and maple syrup in a bowl
Mix oats, protein powder, pumpkin pie spice, and baking powder in another bowl
Combine wet and dry ingredients, stir until smooth
Fold in chocolate chips
Transfer batter to prepared dish
Bake for 35 minutes until golden and firm
Let cool completely before slicing

Notes

Uses 100% pumpkin puree, not pie filling
Mix oats first if combining dry ingredients ahead
Substitute soy/cow’s milk if needed
Store leftovers in an airtight container for 3-4 days
