2 cups full-fat cottage cheese
2 cups fresh spinach, packed
1 cup fresh basil, stems removed
3 cloves garlic, minced
1/2 cup parmesan cheese, finely grated
2 tablespoons extra virgin olive oil
Sea salt to taste

Instructions

Bring a large pot of salted water to a boil and cook pasta until al dente.
Reserve one cup of starchy pasta water before draining the noodles.
Place cottage cheese, spinach, basil, garlic, and parmesan into a high-speed blender.
Pulse on high until the mixture is uniform and bright green.
Slowly stream in the olive oil while the blender runs to emulsify the sauce.
Transfer the sauce to a skillet over low heat for two minutes.
Stir in the cooked pasta, adding reserved pasta water as needed to reach desired consistency.

Notes

Use full-fat cottage cheese for the creamiest texture. If the sauce is too thick, add the reserved pasta water one tablespoon at a time until you achieve a silky consistency. Store any leftovers in an airtight container in the refrigerator for up to three days.
