By swapping dough for flour tortillas, you eliminate long rise times while achieving a satisfying, hand-held meal. Filled with melted mozzarella, zesty marinara, and fresh diced vegetables, these golden-brown bites are mess-free, kid-friendly, and ready to enjoy in less than twenty minutes.

Ingredients

Scale

8 medium flour tortillas
1 cup thick marinara sauce
2 cups shredded mozzarella cheese
1 tablespoon Italian seasoning
2 tablespoons olive oil
1/2 cup diced vegetables (bell peppers or mushrooms)

Instructions

Preheat your oven to 400 degrees Fahrenheit or your air fryer to 375 degrees Fahrenheit.
Lay each tortilla flat on a clean workspace.
Spread two tablespoons of marinara sauce in a line across the center of each tortilla.
Sprinkle a layer of shredded mozzarella over the sauce.
Add the diced vegetables evenly atop the cheese.
Fold in the sides of the tortilla and roll up tightly into a cylinder.
Place the rolls seam-side down on a parchment-lined baking sheet or air fryer basket.
Brush the exterior of each roll with olive oil.
Bake for 15 minutes or until golden brown and crispy.

Notes

Ensure your marinara sauce is thick to prevent the tortillas from getting soggy.
Freshly shredded mozzarella melts significantly better than store-bought pre-shredded cheese.
For a crispy finish, air fry at 375 degrees Fahrenheit for 8-10 minutes.
