1 pound large shrimp, peeled and deveined
2 whole ripe mangoes
2 large avocados, firm-ripe
1 small red onion
3 tablespoons fresh lime juice
2 tablespoons extra virgin olive oil
1/4 cup fresh cilantro

Black pepper to taste

Instructions

Season the shrimp lightly with sea salt and black pepper.
Sauté the shrimp in a skillet over medium-high heat for about 3 minutes until opaque and curled.
Remove the shrimp from heat immediately to maintain tenderness.
Peel and cube the mangoes into half-inch pieces.
Slice the avocados into thick wedges or cubes of similar size to the mango.
Thinly slice the red onion and soak in ice water briefly if preferred to reduce heat.
In a large bowl, toss the cooked shrimp with the fruit and onion.
Whisk the lime juice and olive oil together, then pour over the salad and garnish with fresh cilantro before serving.

Notes
