1.5 lbs Chicken Breast or Thighs (cut into bite-sized cubes)
8 oz Feta Cheese (block preferred)
28 oz Crushed Tomatoes
4 cloves Garlic (minced)
2 tbsp Extra Virgin Olive Oil
1 tsp Dried Oregano
1/4 cup Fresh Parsley (chopped)

Instructions

Heat olive oil in a large, oven-safe skillet over medium-high heat.
Add chicken pieces in a single layer and sear until golden brown on all sides.
Remove the chicken from the skillet and set aside.
Reduce heat to medium and add minced garlic to the skillet, sautéing until fragrant.
Pour in the crushed tomatoes and sprinkle with dried oregano.
Simmer the sauce for 10 minutes until it reduces slightly.
Return the chicken and its juices to the skillet and stir to coat.
Crumble the block of feta cheese evenly over the top of the chicken and sauce.
Place the skillet under a preheated broiler for 3-5 minutes until the cheese is bubbling and golden.
Garnish with fresh parsley before serving.

Notes

Use a block of feta rather than pre-crumbled for superior melting and texture. Ensure the skillet is completely oven-safe before using the broiler. Serve with warm pita bread or over rice to soak up the sauce.
