Tangy dill pickle-brined chicken coated with a golden parmesan-panko crust for a bistro-quality, crispy, and savory dish with a perfect balance of acidity and texture.

Ingredients

Chicken Breasts (4 boneless, 1/2-inch thick)
Dill Pickle Brine (1 1/2 cups, from kosher dill jar)
Parmesan Cheese (1 cup, freshly grated)
Panko Breadcrumbs (1 1/2 cups)
Egg (2 large, room temperature)
Garlic Powder (1 teaspoon)
Dried Dill (1 teaspoon)

Instructions

Submerge chicken breasts in dill pickle brine and refrigerate for at least 2 hours.
Drain and pat dry with paper towels.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Whisk eggs in a shallow bowl.
Combine panko, parmesan, garlic powder, and dried dill in a separate dish.
Dip each chicken breast into the egg, then press into the crumb mixture until fully coated.
Place on prepared baking sheet and roast for 25 minutes, until golden and crispy.

Notes

Brine for longer (up to 4 hours) for deeper flavor.
For extra crisp, flash-sear chicken in a skillet before roasting.
Use a cheese substitute if avoiding dairy.
Store leftovers in an airtight container for up to 3 days.
