Transform simple cod filets into a restaurant-quality meal with this crispy and flaky air fryer recipe. By using a light panko crust and hot air circulation, you achieve a golden, crunchy exterior while keeping the fish perfectly moist and tender inside. This healthy, protein-packed dish is ideal for a quick weeknight dinner, ready in under twenty minutes without the need for deep frying.

Ingredients

Scale

4 cod filets (6oz each)
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs
1 tsp garlic powder
1/2 tsp paprika
Olive oil spray as needed

Instructions

Pat the cod filets completely dry using paper towels.
Set up three shallow bowls: one with seasoned flour (flour with garlic powder and paprika), one with whisked eggs, and one with panko breadcrumbs.
Dredge each filet in the flour, shaking off excess.
Dip the floured fish into the egg mixture.
Press the fish firmly into the panko breadcrumbs to coat evenly.
Preheat air fryer to 400°F (200°C).
Place filets in the air fryer basket in a single layer.
Lightly spray the fish with olive oil.
Air fry for 10 minutes until golden brown and the fish flakes easily with a fork.

Notes

Ensure the cod is patted as dry as possible to help the breading stick. Use a gluten-free flour blend if preferred. Spraying the tops with olive oil is crucial for achieving a nice golden color.
