The natural sweetness of the peppers combined with aromatic garlic and a hint of smoked paprika creates a sophisticated, restaurant-grade flavor profile. High in protein and healthy fats, this meal is perfect for a nutritious weeknight dinner that feels indulgent and satisfying without any complex techniques.

Ingredients

Scale

4 (6oz each) Skinless salmon fillets
1.5 cups Roasted red peppers, drained well
0.5 cup Heavy cream
3 cloves Garlic, minced
0.25 cup Low-sodium vegetable broth
1 tsp Smoked paprika
2 tbsp Extra virgin olive oil
Kosher salt and black pepper to taste

Instructions

Blend the roasted red peppers, minced garlic, smoked paprika, and vegetable broth in a food processor until completely smooth.
Heat one tablespoon of olive oil in a large non-stick skillet over medium heat.
Pour the pepper puree into the skillet and cook for 5 minutes until it reduces slightly.
Stir in the heavy cream and simmer for an additional 2 minutes until the sauce thickens.
Season the salmon fillets generously with kosher salt and black pepper on both sides.
Sear the salmon in a separate pan with the remaining olive oil for 3 minutes per side until a golden crust develops.
Pour the prepared roasted red pepper sauce over the fillets.
Cover the skillet and reduce heat to low, cooking for an additional 3-5 minutes until the salmon is cooked through to your preference.

Notes

Use full-fat coconut milk as a delicious dairy-free alternative to heavy cream. Ensure peppers are well-drained to maintain the ideal sauce consistency. Serve over a bed of steamed greens, quinoa, or roasted potatoes to soak up the extra sauce.
