12 oz fettuccine pasta
1.5 lbs boneless skinless chicken breast, sliced
2 heads romaine lettuce, chopped
1 cup freshly grated parmesan cheese
4 cloves garlic, minced
1/2 cup Greek yogurt
2 tbsp lemon juice
3 tbsp extra virgin olive oil
Salt and cracked black pepper to taste
1 tsp dried oregano
Season chicken slices with salt, pepper, and oregano
Heat 2 tbsp olive oil in a cast-iron skillet over medium-high heat. Sear chicken for 4 minutes per side until 165°F
Remove chicken and let rest for 5 minutes
Boil salted water and cook fettuccine al dente. Drain, reserving 2 tbsp pasta water
