1 pound spaghetti
120 grams Parmigiano Reggiano, finely grated
3 large whole eggs
3 large egg yolks
1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter
1–1/4 cups frozen peas
Salt, black pepper, and garlic powder to taste

Instructions

Season chicken with salt, pepper, and garlic powder.
Heat olive oil and butter in a skillet over medium-high heat.
Sear chicken for five minutes per side until cooked through; remove and set aside.
Fry turkey bits in the same skillet until crispy.
Boil a large pot of salted water and cook spaghetti until al dente.
Reserve one cup of pasta water, then drain the pasta.
Whisk eggs, egg yolks, and grated cheese together in a bowl.
Add cooked pasta and peas to the skillet with turkey bits, tossing over low heat.
Remove skillet from heat, then quickly stir in the egg and cheese mixture.
Slowly stream in reserved hot pasta water while tossing constantly to create a creamy, silky sauce.
Slice the chicken and serve immediately atop the pasta.

Ensure the eggs are at room temperature before mixing. Tempering the eggs with a small amount of hot pasta water before adding them to the pasta prevents scrambling. For extra creaminess, use a microplane to grate the cheese as finely as possible.
