A rich, velvety soup that captures the essence of Chicken Cordon Bleu with tender chicken, turkey “ham”, and melted Swiss cheese in a creamy chicken broth base. No breading or frying required for this halal-friendly, single-pot comfort classic.
1 lb Chicken Breast, cooked and shredded
6 oz Turkey Deli Meat, finely diced (use lean turkey)
2 cups Swiss Cheese, shredded (freshly grated melts best)
4 cups Chicken Broth, low sodium preferred
1 cup Heavy Cream, full fat for thickness
3 tbsp Butter, unsalted
3 tbsp All-Purpose Flour, for thickening
1 tbsp Dijon Mustard
Melt the butter in a large heavy-bottomed pot over medium heat until completely liquid.
Whisk in the flour constantly for two minutes to cook out the raw starch flavor, forming a thick roux.
Pour the chicken broth into the roux gradually, whisking continuously to prevent lumps from forming in the base.
Stir in the shredded chicken and diced turkey meat, allowing them to simmer for ten minutes.
Lower the heat and stir in the heavy cream and Dijon mustard until fully incorporated into the broth.
Fold in the shredded Swiss cheese one handful at a time, stirring until the cheese is completely melted and the soup is smooth.
Turkey deli meat is used as a pork-free alternative to traditional ham in the original cordon bleu
Allow the soup to rest for 5 minutes after melting the cheese for a smoother consistency
For a lighter version, substitute half-and-half for heavy cream
