Buttery and crumbly scone bites filled with the warmth of brown sugar and the crunch of roasted pecans. Perfect for breakfast or brunch, these elegant pastries are ready in under 35 minutes.
2 cups all-purpose flour
1/2 cup light brown sugar, packed
3/4 cup finely chopped pecans
1/2 cup cold unsalted butter, cubed
1/2 cup heavy cream (or half-and-half)
2 tsp baking powder
1/2 tsp salt
Whisk together flour, baking powder, 4 tablespoons brown sugar, and salt in a large mixing bowl.
Add the cold, cubed butter and use a pastry cutter or fingertips to blend until the mixture resembles coarse crumbs with some pea-sized butter pieces.
Fold in half of the chopped pecans to distribute evenly into the base.
Pour in the heavy cream and stir gently until the dough just begins to come together.
Turn the dough out onto a lightly floured surface and gently pat into a 1/2-inch thick rectangle.
Use a small round cutter (about 2 inches in diameter) to cut into 24 bites.
Transfer scones to a parchment-lined baking sheet, spacing them closely for a soft crust.
Sprinkle the remaining pecans and a small amount of brown sugar over the tops of the scones.
Bake at 400°F (200°C) for 18 minutes or until golden and crisp.
Ensure the butter is very cold for a flaky texture.
For a lighter option, substitute half-and-half for the heavy cream.
Store scone bites in an airtight container at room temperature for up to 3 days.
