The result is a moist, tender interior paired with a satisfying exterior that rivals restaurant-quality fish cakes. Simple to prepare and easy to clean up, this recipe brings fresh flavors to your table in less than 30 minutes.

Ingredients

Scale

1 lb salmon (fresh, skinless or high-quality canned)
1 cup panko breadcrumbs
1 egg
3 green onions, finely sliced
1 tbsp dijon mustard
1 tbsp fresh dill, chopped
1 tbsp olive oil spray

Instructions

Drain the canned salmon thoroughly or finely mince fresh salmon fillets into small pieces.
Combine the salmon, panko breadcrumbs, beaten egg, green onions, dijon mustard, and dill in a large mixing bowl.
Mix gently with a fork until just combined.
Shape the mixture into four equal-sized, firm patties.
Preheat your air fryer to 375 degrees Fahrenheit for 3 minutes.
Place the patties in the air fryer basket in a single layer.
Spray the tops of the patties lightly with olive oil.
Cook for 12 minutes, flipping halfway through, until golden brown and cooked through.

Notes

Ensure the salmon is well-drained if using canned to prevent the patties from falling apart. For a gluten-free version, substitute panko with gluten-free breadcrumbs. Store leftovers in an airtight container for up to 2 days.
